Tempature gauge?

Had a new radiator put in, same day the hose from water pump to heater core has a leak. It was close to the clamp so I cut it and reclamped it. The coolant resevoir is empty, filled that. The radiator was full as well. The tempature gauge seems to fluctuate from a little under 210 to a little over 210, back and forth when riding. Is it normal?

That's perfectly normal. Just keep an eye on the reservoir. If there are any air pockets in the radiator, they'll belch fluid out into the reserve and for me that meant I had to flush the entire radiator. Just keep a watchful eye for the next 2 or so weeks and especially the next 5 days, then you're pretty safe.

I had this 2 weeks ago and replaced my hoses because they'd already been cut and reclamped. You may want to do the same.
